Spanish cured Serrano ham is made from the hind leg of the pig and is salted and air-dried for 10 months to develop its distinctive flavour and texture. The name "Serrano" comes from the Spanish word for "mountain" (sierra), because the ham was traditionally cured in mountainous areas of Spain where the cooler, dry air was ideal for the air-drying and maturation process. This would mean the Serrano ham would benefit from the cool, dry air at higher altitudes.Today, Serrano ham is highly regarded for its rich, savoury flavour and delicate texture.
